Party ribs timing question

Hey all,

I usually do full spares but I got some smaller ribs. I was gonna do em party style which I haven't done before. I usually do 2 hours initial smoke then 1 hour covered and 45 minutes unwrapped to firm em up and baste at the end as far as timing give or take as I go by feel, look and internal temps. What timing should I be lookin at with party ribs? I assume they will cook a lot fast?

At 275° those ard about the times I would expect, pull off at 200 internal temp. I would plan an hour plus to place the wrapped ribs inside a large plastic bag and let them rest in a cooler. They will be super tender. I used to sauce the ribs for that last glaze stage but stopped doing that and just let my guests apply the sauce to their taste at the table.

I have a new cherry habanero glaze I wanna try :<).. I'm gonna use kosmo's peach rub and then glaze with this cherry glaze.

I cook a lot of baby back ribs. Ribs on pellet grill for 3 hours super smoke meat side up at 225 degrees. Spritz them at 2 hours then wrap them in foil meat side down add pads of butter for an additional 1-1/2 hours use only salt, pepper & garlic powder. Used to check internal temps but after many cooks this time and grill temp works great.
