I suspect you might find an Elk brisket to be a little too lean to stay moist with this method. I've never personally tried it, (IE: Elk brisket low and slow) just going on experience in BBQ in general. Let us know how it goes if you try it.

Rubs come in all styles.. havent had a bad one yet .. but short cutting to pellets is a deal breaker ..I’m not Texan, but a coworker is a transplant, and makes some of the best brisket I’ve had...he’d scoff at the rub; he uses nothing but salt on his—not even black pepper.

I run a half barrel smoker and use some recipes i picked up along the way... key to good bbq is know your smoker. If your not good mastering temp on your smoker, bbq will be mediocre
