For many years I had a camp that I would drive to almost every Friday afternoon after work and stay the week end or more. On the way to camp I would pass a Winn-Dixie grocery store where the all meat cutters saved all the good beef trimmings for 3 days (Wed, Thur, Friday) and I would stop and pick it up on the way. At camp, every deer killed was field dressed and hung in a walk in cooler until the following weekend to be processed. Then they were processed and whatever meat was not used for straight out cooking was ground with up to 20% beef fat trimmings mixed and ground in. Makes the absolute best venison for burgers, chili, meat loaf, Shepard's pie, and anything else requiring ground meat of any kind. Try it ... you'll like it! But keep in mind the trimmings must be fresh. jj
