Process Your Own Deer Part 1—Quartering

Good article. I did work at a processor that a friend had for 15 years or so. I did take my buck to one this year just to have jerky and slim jims made. He make really good jerky. The only thing I would do different than the article is cut some of the fat off the meat first along the spine and some off the back legs and use a meat saw to cut the rump roast at the end of the spine near the back legs.
