It's just the wife and me so I haven't cooked many full packer briskets mostly just flats. Will be using a Matt Pittman Meat Church Holy Cow rub Texas brisket recipe on a 15-18 pounder. The weather forecast is heavy rain and mid 40-50's temp for the next few days will probably put my cook on hold. Just found out the owner is retiring and closing the place. But I heard that a couple of employees are buying the place from him. Huge liquidation sale going on with everything in the store at half price or at cost. I will stop on my way home to see what may be left. And ask when the new place will open again, under new owners. I sure hope soon, and that they open the range back up at the same time.
