Up early today. Maggie wanted to go outside in the cooler weather. Having the first cup of coffee with breakfast. Wife and I need to go to Holloman AFB this morning to get her a new ID card. Husky food ready for my girl. Not to much to do today. They say we will get rain tomorrow.

Hopefully you will get the rain, they guess we'll get some and that's the extent of the rain. The guessers talk about it and then nothing.
 
Hi,

I just got back from walking Nellie around the block. The kids are delayed in Florida so the boxer gets to stay another night. I'm kinda happy about that. :) Now she's bugging me for supper.

I got my truck back from the shop this afternoon. Wow. $800 to fix a couple of idiot lights and the parking brake. If I wasn't so old I'd get my own shop, a bunch of tools, and learn to do it myself. :p

Normally use Sous Vide to cook steaks but there is no smoke flavor. Have an old MasterBuilt electric smoker at least 12 years old. If not careful this could be a long post. Instead of using wood chips used a smoke tube with pellets to get maximum smoke in the master built smoker. Smoked the strip steak for about 40 minutes at 225 degrees till internal temp was 135 degrees then pan seared it in butter & olive oil to internal temp of 137.5 degrees. Figured it would be too much of a pita to use one of my Traeger smokers. Holes in the steak come from two meat probes. Here again without bragging tastes great, very smokey flavor, very juicy and tender.

My brain seems to engage at around 0230 every morning. Ah well...eleven months from now (give or take) and I'll be out of there. and then maybe my brain will knock it the hell off. Time for the #2 brew. Just wish it would warm up, only 7 degrees out there this morning :rolleyes: . It's supposed to reach 38 today with 30 mph winds. Seems like winter is using claws to hang on till the very end...........
