My best friend, now deceased supplied us with the best. Elk tenderloin, mouth watering. A rare cancer took him and I miss him dearly. All of his vacations were around different hunts and he was very generous.
 
When I came out West when I was kid & had my first elk meat it reminded me of the great beef we raised on the farm in W. PA.

Really can't stand most supermarket beef, but in my area we have several ranch-straight-to-local market stores here & 99.9999% of MT beef (Angus) is grass-fed vs. feedlot.

Plus, we have some buffalo ranches so bison meat is readily available.

Here’s the tenderloins out of the deer I shot this year. This was lunch the day after I took him.

Grilled to medium rare with butternut squash and wild rice soup that my wonderful wife provided.
