I grew up on a cattle ranch and feed lot. My Dad raised prime Angus. My Mom would take a prime steak and turn it into shoeleather. It's how the oldtimers cooked meat. You couldn't chew it without pouring gravy or salsa all over it. I learned to cook my own steaks when I was about 10 after tasting a medium rare steak. Thanks Mom, I'd rather have the fried chicken.
