I like to take a deer ham gently unroll it. Tenderize it, garlic salt, black pepper, crushed red pepper, a layer of pepper jack cheese, layer of grated sharp cheddar, slices of bell pepper, sweet onion and slices of jalapeno pepper. Roll it up and tie it shut . Either put it in the oven or smoker. Never any left for leftovers.
